  • 1 lb chicken breast, finely chopped
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1/2 cup carrots, shredded
  • 1/4 cup green onions, sliced
  • 1/4 cup peanuts, chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 1 teaspoon ginger, grated
  • 1 head iceberg lettuce, separated into leaves

Instructions

  1. Heat sesame oil in a large pan over medium heat.
  2. Add garlic and ginger, sauté for 1 minute.
  3. Add chicken, cook until browned and cooked through.
  4. Stir in bell pepper and carrots, cook for 2-3 minutes.
  5. Mix in soy sauce, fish sauce, lime juice, and sugar. Cook for another minute.
  6. Remove from heat, stir in green onions, peanuts, and cilantro.
  7. Spoon the chicken mixture into lettuce leaves.

Notes

  • For a spicier version, add chili flakes or a splash of Sriracha sauce.
